Spicy beef stew

Basic Curried stew

Ingredients



750g boneless beef neck, cubed, or beef ‘curry pieces’
30 ml cooking oil
1 onion, chopped
15 ml curry powder
15 ml turmeric
1 chilli, seeded and coarsely chopped
5 black peppercorns
2 bay leaves
1 apple, cut in wedges
1 tomato, skinned and cubed
3 carrots, sliced
200 ml meat stock
15 ml cake flour



​Method

Brown meat in heated cooking oil. Add onion and sauté till transparent. Add curry, turmeric and chilli and fry for 1 minute. Add peppercorns, bay leaves, tomato and heated meat stock. Lower heat, cover with lid and simmer for 1 ½ hours or till meat is tender. Thicken with cake flour and water paste if necessary. Serves 4.

 

 

Ingredients



1 onion, chopped
25ml sunflower oil
1 clove garlic, crushed
1kg stewing steak, cubed
2 tomatoes, skinned and chopped
1 packet ROYCO Chilli Beef & Green Pepper Soup
400ml water
1 x 420g can baked beans
2 potatoes, peeled and quartered



Method

1. Fry onion and garlic in the heated oil until softened.

2. Stir in the stewing steak and brown, add the chopped tomato.

3. Mix the soup powder with 400ml water and add to the stewing steak.

4. Cover and simmer for 1 hour, season to taste.

5. Add baked beans and potatoes and cook for a further 20 minutes or until potatoes are cooked.

Preparation time : 30 minutes. Cooking time : 1 hour 20 minutes.
Serves 4 - 6.

Ingredients



750g piece of  topside
7ml sugar
20ml soy sauce
12,5ml sunflower oil
1 clove garlic, crushed
1 packet ROYCO Brown Onion Soup
25ml sunflower oil

Method
1 can bean sprouts or finely sliced green beans
2 spring onions, chopped

1. Slice the meat thinly across the grain into neat strips.

2. Marinate in a mixture of the sugar, soy sauce, 12,5ml oil, garlic and soup powder.  Set aside for a minimum of 30 minutes.

3. Heat remaining oil in a large heavy pan and when hot quickly fry the meat mixture, turning constantly till cooked (6 - 8 minutes).  Add bean sprouts
and toss with a fork.  Season to taste.

Serve immediately, sprinkled with spring onions.

Preparation time : 15 minutes.  Cooking time : 8 minutes + 30 minutes for marinating.
Serves 4 - 6.

 

 

Ingredients



500g rump steak
25ml sunflower oil
1 onion, chopped
100g mushrooms, sliced
1 packet ROYCO Creamy Mushroom Soup
250ml water
100ml milk
10ml tomato paste
60ml sour cream



Method

1. Cut the meat into thin strips then brown quickly in hot oil.

2. Add the onion and mushrooms and continue to cook until almost done.

3. Pour over the soup powder mixed with 250ml water, 100ml milk and thetomato paste, stir till thickened.  Season to taste.

4. Cover and simmer gently for 8 - 10 minutes, mix in the sour cream andserve.

Preparation time : 15 minutes.  Cooking time :  15 minutes.
Serves 4.

Beef stir fry

Beef Stroganoff

 

Ingredients



25ml sunflower oil
2 onions, chopped
2 cloves garlic, crushed
10ml curry powder
1kg stewing beef, cubed
2 tomatoes, skinned and chopped
1 packet ROYCO Hearty Beef Soup
600ml water
10ml sugar
2 large potatoes, cubed



Method

1. Heat oil in a large saucepan, add the chopped onions and garlic and fry till softened.

2. Add the curry powder and fry for 1 minute.

3. Add the meat and then the tomatoes.

4. Add the soup powder mixed with 600ml of water, and the sugar.

5. Cover and simmer gently for 1 hour, add more water if the curry becomes too dry.

6. Add potatoes, season to taste, cover and simmer for a further 20 minutes or until potatoes are cooked.

Preparation time : 30 minutes.  Cooking time : 1 hour and 20 minutes.
Serves 6.

Hearty beefy curry

Preparation Time: 20 minutes, including marinating

Cooking Time: 11/2-2 hours
Serves 6



Ingredients


1 kg stewing steak, cubed
30 ml sunflower oil
2 onions, chopped
1 green pepper, diced
1 packet ROYCO Rich Oxtail Soup*
200 ml water
125 g mushrooms, sliced

MARINADE:
15 ml soup powder*
5 ml sugar
100 ml water
20 ml soy sauce



Method
1. Combine marinade ingredients and pour over meat.  Marinate for 10 minutes.
2. Drain meat (reserve marinade) and brown in 15ml oil in a hot pan.
3. Sauté onion and green pepper for 10 minutes in remaining oil in the pan.  Add reserved marinade and remaining soup powder mixed with water.  Stir to thicken, add sliced mushrooms and pour mixture over meat.
4. Cover and bake at 160º C for 1½ - 2 hours, or until meat is tender.  Stir occasionally during cooking.

Steak casserole

Preparation Time: 15 minutes

Cooking Time: 11/2-2 hours
Serves 6



Ingredients
30 ml sunflower oil
2 onions, chopped
3 cloves garlic, crushed
1 kg stewing steak, cubed
1 packet ROYCO Hearty Beef Soup
250 ml water
125 ml beer
50 ml tomato puree
1 ml mixed herbs



Method
1. Sauté onion and garlic in 15ml oil and place in a large casserole dish.
2. Brown meat over high heat in remaining 15ml oil.  Add to onions.
3. Mix soup powder with water, beer, tomato puree and mixed herbs.  Pour over meat and onions.
4. Cover and bake at 160º C for 1½ - 2 hours, or until meat is tender.  Stir
2-3 times during the cooking.
